Fire Grilled Trout With Cous Cous Salad

Hello everyone!

Today I wanted to share an amazing meal that we have been enjoying a lot of as of lately!  Now that we have some nice warm weather, we decided to build a lovely fire pit in our backyard and let’s just say we have been using it EVERY SINGLE NIGHT!  If you don’t have a fire pit, we highly recommend that you make one, not just for food but it is amazing for what it does for your spirits!

Munashe and I love the outdoors and we love watching outdoor survival shows and that is what inspired us to cook over the fire pit more often.  There is something about cooking over the fire that is very grounding.

All you need are the fish racks, which you can find at your local outdoors store, or Canadian  Tire, or Home Depot.

The light Cous Cous salad pairs so well with fatty fish!

Trout Marinade:

  •  Fresh garlic
  •  Fresh Dill
  •  Salt
  •  Pepper
  •  Fresh lemon
  •  Avocado oil (better for high temp cooking)

Cous Cous Salad:

  •  Cous Cous
  •  Red onion
  •  Green olives
  •  Cherry tomatoes
  •  Cucumber
  •  Olive Oil
  •  Fresh lemon juice
  •  Feta cheese (optional)

We eyeball all of our ingredients, so feel free to add as much or as little of each ingredient as you like!  Cooking this way is much more free and creative + you can’t really mess this dish up!
