Hi everyone! This week we are talking protein bowls… protein bowls are a huge trend right now and for good reason! They are healthy, filling, and generally inexpensive when you make them at home. The best part about these protein bowls is that you can literally customize it with whatever you want. At home, we make our bowls with a base of spring mix and a small amount of quinoa. Although quinoa is not technically considered “Keto” or “paleo”, it is considered a super food. Quinoa is actually considered to be a seed and it has been around for thousands of years; packed with protein, fibre, and essential minerals. It of course has a higher carb content so that is why we eat quinoa in moderation and as a healthy alternative to grains.
Ingredients for Bowl:
- Grilled Chicken (you can customize seasoning to your own preference)
- Quinoa
- Spring mix
- Shredded carrot
- Avocado
- Roasted sweet potato
- Roasted Chickpeas
- Roasted onions
Ingredients for dressing:
- 1/4 cup of tahini
- 1 Tbsp maple syrup
- 1/2 medium lemon (juiced)
- 2-4 Tbsp hot water (to thin)
Seasoning for the roasted sweet potato, chickpeas, and onion:
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp chili powder
- 1/4 tsp salt
- 1/4 tsp pepper
Putting it all together:
Once all your ingredients are prepped and cooked, place the quinoa and spring mix at the base of a big bowl and add the rest of your ingredients on top with dressing. Please refer to the picture for a visual of what your bowl should look like.
