Recipe of the Week- Pan Seared Salmon with Avocado Salad

Hi everyone!

I am back with another delicious recipe that we make on a regular basis at home!  This is a simple meal and it is not very time consuming which is key when you are hungry after a long day of work and need food ASAP!  Salmon and a fresh avocado salad is like a match made in heaven, it is such an amazing combination… the avocado salad compliments the richness of salmon perfectly.  This is the perfect no carb dinner that will leave you full and satisfied.

Ingredients for Pan Seared Salmon:

  • Fillet of Salmon
  • Salt & Pepper (to taste)
  • Garlic Powder (to taste)
  • Smoked Paprika (to taste)

Preparation:

  • Before you season, make sure that your piece of salmon is completely dry and at room temperature
  • Season both sides of your salmon fillet to your liking. (I say “to taste” for the seasoning because everyone is going to have a different size of salmon fillet so it is really all preference for your seasoning- some people like more seasoning than others)
  • Heat your pan on medium to high heat (you want the pan to be hot before cooking)
  • Add a thin layer of avocado oil or coconut oil than add the fish skin side down
  • Let the visual cues guide you!
    • When pan-searing, the bulk of the cooking takes place while the salmon is skin side down
    • After it has been cooking for a few minutes, you will see the colour starting to change and that change in colour will be a good indicator of how the cooking process is going
    • Once 2/3 of the colour has changed it is time to flip the salmon and cook for couple more minutes

Ingredients for Avocado Salad:

  • 1 Avocado (cubed)
  • 5 Cherry tomatoes (cut in half)
  • 1/4 of a red onion (diced)
  • 1 tablespoon of Extra Virgin Olive Oil
  • 1/2 of a Fresh Lemon
  • Salt & Pepper to taste

Preparation:

  • Combine all the ingredients into a bowl and mix with oil and lemon
  • Season to taste
