We love a taco bar so much we’ve got two versions of it in regular rotation, and this is the lighter one — same idea, same amount of fun building your own plate, but butter lettuce leaves standing in for tortillas. It’s not about cutting anything out for the sake of it; some nights we just want something a little lighter, and lettuce wraps let all the toppings actually shine instead of getting buried inside a shell.
We laid everything out exactly the way we would a full taco bar: seasoned ground beef, shredded cheese, a fresh pico de gallo, sliced avocado and onion, sour cream, and a good amount of finely grated parmesan on the side for anyone who wants an extra hit of salt and umami on top. Crisp butter lettuce leaves held everything together, and honestly, they add a satisfying crunch that a soft tortilla never could.
This is a great one for the fridge, too — everything here holds up well, so it’s an easy make-ahead option before a busy training day, or a fun, hands-on dinner to set out when we’ve got a full house during Stay & Play. Everyone assembles their own, nobody has to worry about dietary preferences clashing, and cleanup is basically nonexistent.
