Today I wanted to make a super easy breakfast/lunch that felt light and fresh and delicious!

Here is what you need:

  • 1 Mini Cucumber
  • 1/2 of an Avocado
  • 5 Cherry Tomatoes
  • 2 Eggs
  • 1 Sausage
  • Lemon Juice
  • Salt & Pepper
  • Garlic Powder
  1. Cube your veggies and mix with lemon juice, salt & pepper and garlic powder (set aside)
  2. Cook your sausage, cube and mix with your avocado salad
  3. Cook your eggs to your preference and enjoy!

Hi everyone!

I have the easiest and most delicious fall soup this week!  It is super healthy, filling and will warm you up on these cool fall days!

  1.  Peel and cube 1 medium size butternut squash
  2.  Cut up 1 head of cauliflower into similar size pieces as the butternut squash
  3.  Add everything to a bowl with 3 cloves of garlic and 4 shallots (cut into quarters)
  4.  Season your veggies with salt, rosemary, and olive oil (to your taste)
  5.  Place everything onto a baking tray and smoke or roast your veggies until they are fork tender (about 45 mins)
  6.  Add 1 carton of vegetable stock (or chicken stock) to a big pot at medium heat & add all the cooked veggies
  7.  Let everything simmer for 10 mins and remove from heat
  8.  Blend everything together until smooth with a hand blender
  9.  Add 1/2 of canned coconut milk
  10.  ENJOY!

This recipe is honestly so easy and makes you feel all warm and cozy on the cooler fall days!  And it is absolutely guilt free and nutritious!
